1.Clean the cucumber under cool running water. Cut and discard the edges.
2.with a vegetable peeler, peel about 1/2 inch of skin and leave 1/2 inch of skin on, alternate all the way around.
3.slice the cucumber in about 1/4 inch slices.
4.place the cut up cucumber on a flat plate and make a pinwheel around the edges, make certain you overlap each slice.
5.mix the yogurt with the ranch dressing in a separate bowl
6.spoon a ribbon of the yogurt ranch dressing in the center of the pinwheel.
7.If there is any remaining dressing place it in a small container in the center of the bowl, for those who like extra dressing.
