果沙拉的做法
原料:冷藏鲜奶100克、奶粉30克、盐5克糖70克、沙拉油150克、柠檬原汁150克、生蛋黄3个
调制沙拉酱,要用上等的色拉油,加上新鲜的鸡蛋黄.取几个鸡蛋的蛋黄(两人份)放在大碗里,加一茶勺色拉油,用钢勺抽打.抽打的时候一定要按一个方向,同时一点一点的往里加色拉油,然后继续抽打.开始加油一定要少量,否则不能很好的进行乳化反应.等蛋液有一些粘稠度的时候,可以多加点油然后再抽打,再把原材料(鲜奶、柠檬汁、盐和糖逐一加入)直到蛋液变成很粘稠的糊状为止(比炼乳还要粘稠一些).如果嫌酱太粘稠可以稍微加一点柠檬汁或者用白醋代替.
最好是两个人一起做,一个边加色拉油,一个用钢叉打色拉油.一定只能朝一个方向打
