"Saliva contains the enzyme salivary amylase唾液淀粉酶.The enzymes (amylase),will begin to break down the long chain of glucose molecules (starch) into simple sugars such as maltose and glucose .It is the beginning of the process of trying to get the big sugar chains into di and monosaccharides,so that they can be digested accross the gut lining."
