except和now要分开看.except是连词,表示例外,翻译成“只不过”还是很贴切的.now只是后面句子的时间状语,表示现在和以前不同了.“except now”虽然常常在一起出现,但是并非是个固定搭配.比如你列的这几个句子,把now挪到句子中间,意思没有变化（也许更容易理解些）：
Except we are now always potentially in reach of someone else who wants our attention.
Except they are now hunting men!
Except we must now imagine the waves oscillating in time instead of space.
