"Let's have a barbecue!" Many people would say when they're planning a get-together.You may have a
barbecue when camping out on the edge of the woods.Or you may have it in your garden.It's easy and
fun.You don't need a lot of equipment.
A barbecue set usually has a tray four or five inches in depth,in which the charcoal burns,a metal grill
to cover the tray,and several long metal rods,called skewers,which hold the food.It is wise to start burning
the charcoal so as to make a good fire,but wait until it is hot and red and smokeless before cooking.
One of the nicest barbecued meals is kebabs,which have long been a favorite in the middle East.Here are
some of the things that go very well together in kebabs:
Beef or lamb,cut into small pieces.
Various kinds of small vegetables,e.g.onions,green peppers,tomatoes,etc
Put all the food onto the skewers and lay them on the girll.while cooking ,turn the skewers several times,
so that the food is cooked all round,and brush on a little oil.If you are fond of potatoes first,but do not
remove their skins,Lay them among the charcoal in the tray.When everything is ready-after about half
an hour's cooking-- serve the kebabs,vegetables and potatoes with fresh salad.
Although this barbecued meal,cooked and served in the open air,is excellent by itself,there are two ways
by which it might be improved.The food ,especially the meat,can be put into a mixture of cooking oil and
cheap red wine,and if you like,a few teaspoons of flour,for an hour or two before cooking.No one need
worry about the alcohol in the wine:all of it will certainly escape into the air as soon as the food is put on
the grill.The other thing is to serve a barbecue sauces can be bought quite cheaply,and all books about
cooking tell you how to make them cleverly
